Carolyn's Cupcakes!

Since moving to Bloomington, I have been fortunate enough to have made some really amazing friends.  Once of my "new' friends is Carolyn, and today she turns 30!!  I thought it would be nice to make her something sweet to celebrate (we are also going out to a Kelley School event!).  Anyway, I absolutely LOVE this cupcake recipe from Glorious Treats.  I think it is THE BEST frosting I have EVER made!  FYI I am SUPER picky when it comes to frosting- I don't like it too sweet, grainy, or sugary.  For example, I really dislike Sprinkles (love their "cake part") frosting.  It has WAY to much sugar and you can actually taste the granules.  I also wasn't a big fan of Magnolia Bakery's frosting (shocker I know).  Anyway, if you are like me, and are a "frosting snob" try this recipe! It will NOT disappoint!

P.S.  I tried my best to "pipe" the frosting using a ziplock back- ha-ha.  I should at least get points for trying to be resourceful!  Also, you can get the cupcake liners at Target (in store only).

Vanilla Cream Cheese Frosting
½ cup (1 stick/8 Tablespoons) butter (set at room temp about 10 minutes, but should still be cool)
8 oz. cream cheese (directly from fridge)
1 teaspoon vanilla extract (always use pure vanilla extract if possible)
4 cups powdered confectioners sugar
1 to 4 Tablespoons heavy cream, heavy whipping cream (or milk- although I do like the richness that cream adds)
Directions:
*Place butter in a large mixing bowl and beat until smooth. Add cream cheese and blend until fully combined and smooth, about 30 seconds.
*Add vanilla extract and powdered sugar and blend on low speed until combined. Increase to medium speed and beat until it begins to get fluffy.
*Slowly add the heavy cream, a little bit at a time until desired consistency is met. (Don’t add too much if you want the frosting to stay in place when piped on cupcakes.)
*Beat until fluffy, about 1 minute.
*Use at once or keep refrigerated. (This frosting will keep well in the refrigerator for several days, but you may need to re-beat it for the best texture.)
